Ten day forecast has decent weather, lows in 50s, but we tend to get pretty cold mid to late October.

These are Paul Robeson and I've been able to harvest a few but there are so many that haven't ripened and seem to be taking forever.

Is there anything I can do to encourage ripening? Haven't used much of any fertilizer in a couple weeks. Is that something I should do? Fish emulsion or something else?

If frost is beginning to hit your region, then pick them and place them in a bowl with tomatoes and bananas that are ripe or on their way to being ripe. Otherwise, leave them on the vine, keep watering, and cut new growth/ flowers off the plant to promote ripening.

As long as it doesn’t freeze, it’s best to leave them on the vines. Cut off any flowers along with empty branches and suckers. This will ensure all the energy goes into helping the fruit mature.
