  1. Decided to post stock recipe (I don’t have amounts sorry)

    Stock recipe
    Par boil lobster tails then strain and save water tails were boiled in.
    Roast leftover seafood shells in oven (lobster and shrimp shells should be the main base of these shells as they will be be the most fitting with this stock) until it has color.
    Add into lobster water with,
    Ginger,
    Green onions,
    Leek,
    Kombu,
    Sake,
    Dried shiitake mushrooms.
    Get to boil once boiling let boil for 10 minutes then take out kombu.
    Continue on a simmer for 3 hours.
    Once time is up add in Bonito flakes and let cool (15 min should be good).
    Strain and done.
