In Germany, we have a Salami/Sausage Snack called "Fleischpeitschen". Those incredibly addictive "meat whips" have a whopping 482kcal/100g. My recipe only has arround 117kcal/100g (+ some kcal for spices)
Ingredients:
- 400g lean minced beef
- 4,4g smokey salt (hickory or smth like that)
- 0,8g pepper
- 0,8g paprika powder
- 0.8g garlic powder
- 0.8g chili powder (optional)
- 1 Tablespoon soy sauce
- 50ml water
Steps:
- Mix all the ingredients (or better yet, blend them to make it a smooth paste)
- put the meat paste in a plastic bag and cut part of the corner, so you can press the paste through
- press the meat paste onto a baking sheet, into multiple long sausages. make sure each sausage is one solid piece. (if you have issues creating a solid piece, add a tablespoon of water so the meat paste gets a bit smoother)
- put it in the oven at 60°C and put a wooden utensil in the door, so that the moisture can escape. leave it in the oven for in total 4,5h.
- around 2h after putting it in the oven, put the sausages onto a baking grid like this, so it gets heat from all directions
- leave it in the oven for the rest of the time so it is in the oven for around 4,5h in total
the result should taste great and keep for around a month in an airtight container.
