The vortex channels the heat up right onto the cast iron grill grate insert, and it get ripping hot. Then I can move food off to the side for indirect heat with the lid on. The brand of the after-market grate is Only Fire.

    Seems a bit aggressive for Salmon, I’m always to paranoid with overcooking fish.
