You either try to protect it from the frost to buy more grow time, or harvest and ripen them in a bag/box with ethelyne producing fruit. Regardless the latter is always the end result

I have heard cut the plant and hang it upside down in a place that frost won’t reach ie garage. What nutrients are left in the stock will continue to feed the fruit up to a point. Or just pick them and try the bag/box thing. They won’t be as sweet as they could be..
