Last night for dinner I made like a Reuben casserole (but I used chipped pastrami instead of corned beef). I mixed together the meat, sauerkraut, spaghetti squash, and Russian dressing in a bowl. Then layered it in a baking dish with Swiss cheese and baked it until brown. Drizzled more dressing for serving and sprinkled some black pepper. Good stuff! I’ve made a pizza one, lasagne one, a taco one….anything!

    Oooo nice. I’d been wondering how spaghetti squash would hold up for lasagne. I’ve only used it as a replacement for actual spaghetti (with meatballs). Thanks — definitely going to try that!
