Finished plate in second image. – borsari original blend + rosemary – 1.5 hr @135 – put in fridge while I finished my workday – seared on piping hot charcoal grill.
Plated with purple Sweet potato mash, sautéed mushroom, garlic, onion. Cubes of grilled brun-uusto cheese.

    Anything in the purple sweet mash? I’ve found them so flavorful on their own, I usually just salt and call it good. But curious what others do.
