
Hi all, I just got back from Seoul and while I was there I ate at this delicious restaurant near where I was staying, Gimgane Kimbab Myeongdong Station. There they had a self serve soup that my friends and I ate but none of us thought to ask which soup it was. I know this maybe a long shot but would anyone have any idea of the name of this soup? I googled the spot and went through the reviews but no one mentioned the type of soup. I want to make it at home, it was so good! (Also I added pepper to it but it was a clear soup.)

Most likely an anchovy based broth. It’s literally just meant to accompany your meal 🙂
If you have an Asian grocery store nearby, ask them for concentrated udon broth (or *udon dashi* in Japanese). Most gimbap shops in Korea use that concentrate to make those free soups. Nobody makes it from scratch lol. You just add hot water to it to about 1:20 ratio, and that’s it! The most popular product is [청수우동다시](https://choungsoofood.com/product/%EC%B2%AD%EC%88%98-%EC%9A%B0%EB%8F%99%EB%8B%A4%EC%8B%9C18l/40/category/26/display/1/) (it reads Chung-soo Udon Dashi), if you want a specific brand.
This could typically fall into 2 things, both very similar. Good chance it was fish cake soup broth, in which case you can just look up fish cake soup recipes and there’s lots of recipes for it. Also it’s possible that it’s a Japanese style udon type soup broth made with tsuyu as mentioned in this post.
I could sip this like tea all day 😅😅 there’s a Korean food brand that actually makes tea packets flavored like this broth if you want to go further, eomuk teabag or odeng broth tea bag
