  6. That happens to me all the time. Doesn’t help it’s also humid as hell in the back prep room since there is no airflow and only hoods under the stoves

    When I was a prep at a diner, I would do a bunch of stuff in the walk-in during summer. Certain things you had to, like shaping croquettes. Then it felt good walking back into the kitchen

    I switched careers out of restaurants 10 years ago and never looked back. Completely forgot about these moments in the walk in. Thanks for the memory jog! It was the hardest thing I’ve ever done but I miss the action sometimes.
