    What is the texture like? Like a filet or a chuck? Is it mainly for roast beef sandwiches or do you make a full meal with say mashed potatoes, gravy and so on.
    Never tried it, but the price is making me wanting to do this.

    Too long. I never did a tri tip over 2 hours. It’s a steak, it doesn’t need 12 hours.
