1 10oz ciabatta loaf
4 oz goat cheese
1/2 eggplant, thinly sliced
1 zucchini, thinly sliced
1 squash, thinly sliced
1 tomato, thinly sliced
1 tbsp olive oil
1 clove garlic, minced
1/2 tsp thyme
3-4 fresh basil leaves, minced
Pinch of red pepper flakes, salt and black pepper
1 cup marinara

1. In a small bowl, combine the olive oil, garlic, thyme, basil, red pepper flakes, salt and pepper. Set aside.
2. Heat 1 tbsp of oil in a large pan over medium heat. Add eggplant slices and cook for 2 minutes on each side, or until softened. Remove eggplant from the pan and repeat with squash and zucchini. You want everything to be soft and pliable but not mushy.
3. Assemble sandwich by spreading goat cheese on both halves of bread. Then top with eggplant, squash, zucchini and tomato. Brush on oil mixture and close the sandwich.
4. Cook in a panini press for 5-7 minutes on high heat or in a pan over medium heat for 3-4 minutes on each side.
5. Cut into 4 pieces and enjoy with warmed marinara.
