
The recipe I follow
Room temperature egg whites 3 brown eggs
I use a mixer till stiff peaks and add 1/4 cup of white sugar and 1/2 teaspoon of vanilla and gel food coloring I then mix that with 2 cups of powdered sugar and 1 cup of almond flour, I make sure to “beat” the air out of the mixer, I then let it sit for at least an hour and bake them at 15-17 minutes at 300F. For the macronage part, I have made sure I don’t over mix and don’t under mix, I even tested out different mixing and placing them next to each other to see a difference and they still come out flaky. For these specifically I didn’t over mix just to make sure. I have no idea what I’m doing wrong 😅

When you say “flaky” what is it you mean exactly? I can see at least 7 of the 12 Macarons in this picture look absolutely fine! They have great feet on them too. When I make macarons, I have a “discard” pile of shells that my partner looks forward to eating as each batch will have a small amount of failures lol!
