I just purchased and opened it today (10/7) tasted it and I think it’s good. It’s been a while since I’ve had kimchi honestly.

If you’re talking about the “best before” date, it should still be good. Just not as good as it would’ve tasted before that date. I’d be more concerned about dates that have “use before” above the date.

take the best before date with a grain of salt since Kimchi is a fermented food. Here is how you tell if kimchi is off:
1. the crunch is gone and the texture is too soft
2. The sourness has become overwhelming
3. visible mould (this is only due to improper storage)

Well, it’s mat kimchi… so It probably went sour, but it’s kimchi still. Unless you smell death, it’s probably edible.
