The "cakes" were made like an under hydrated polenta, but with mada harina, tons of Asiago and parm in there. Pumpkin too obviously. The ragu is just a heavily seasoned pork shoulder braised in red wine and tomato sauce.

    Someone watched Chef John’s pumpkin polenta bar video and got the same idea I had. Did you make the crispy fried sage to go with it? This looks yummy!
