Risotto al Tastasal is a dish typical of Veneto, and specifically of the Verona area and the Monti Lessini. Tastasal is smilar to the meat sausages are made of, but it is spiced and generally more flavoured.
1. Create some meat broth where to boil the rice (boil it for 15min)
2. While boiling the rice take the tastasal, smash into tiny pieces and lightly roast it in a pan with a spoon of butter.
In the process take some fresh rosemary and mix it with the tastasal.
Keep mixing it with a low flame and eventually turn the flame off if it starts to become too roasted.
3. Check the level of the broth and eventually refill it with some hot water. You should do so only if you see that the broth is being absorbed by the rice before due the 15 minutes.
4. When the time is up take the rice and put it in the pan with the tastasal. Mix everything together with a low flame.
5. Once done you can put it in the plates and add some more fresh rosemary, after that you can finally taste it 🙂
