Phở Gà Hà Nội with juicy chicken breast

  1. Sous vide chicken breast (63 degree C for 90 min.)

  2. Create chicken stock. Simmer chicken bones along with an onion and season the broth with sugar, salt, fish sauce and a dash of MSG (optional).

  3. Toast Phở spices (cardamom, ginger, onion, cinnamon, star anise) in a pan, clean off burnt parts and add to broth to simmer.

  4. Cook Pho noodles according to package instructions.

  5. Prepare garnishes (green onions, coriander, lime and red chili).

  6. Serve as soon as the chicken is done.

Tips: If desired, use fewer noodles and replace with veggies (e.g. bean sprouts and cabbage) to decrease calories.
