Recipe:
Rye noodle:
– 450 g wheat flour
– 50 g rye flour
– 5 g salt
– 5 g sodium carbonate
Broth:
– 1/2 filet of kippers (smoked herring)
– 1 leek
– lump of ginger
– 3 tsp of dashi powder
– 2 litres of water
– 400 g calf and pork
Tare:
– 4 tsp soya
– 1 tsp salt
– .5 tsp sugar
Oil:
– Sesame seeds oil
Topping:
– Spring onions
– Ramen egg
– Corn
– Calf and pork katsu (meat used in broth with soya and sugar)
