Jocoque and Huevos Cazuela (Recipe ⬇️)
## Ingredients Simple Jocoque
– 1lt Yogurt
– 10g salt
Yields 550g
## Ingredients Huevos Cazuela
– 1 Egg
– 1tsp Finely Diced Onion
– 1tsp Finely Diced Tomato
– 1tsp Finely Diced Jalapeño
– 1 Mint Leaf
– 1tbsp (16ml) Jocoque
– Salt
– Olive Oil
– Za’atar
## Step by step
1. Mix the yogurt with the salt.
2. Place a cheese cloth on a strainer and place that strainer on top of a bowl. Making sure there is space between the bottom of the strainer and the base of the bowl.
3. Add your yogurt and fold the cheese cloth without applying pressure.
4. Leave it in the fridge for 24 hours.
5. Preheat the oven to 180ºC.
6. Crack an egg open and separate the yolk from the white. Add olive oil and the white into a cazuela (stove proof) or in an oven proof bowl. (I have no cazuela so I’m using a soufflé bowl)
7. Add the white in the cazuela or bowl and put it in the oven for 8min.
8. Take out the white, add the yolk, salt, and into the oven for another 2min.
9. Top with tomato, jalapeño, onion, jocoque, mint leaf, and Za’atar.
