For the Gnocchi:
Ingredients
– 1 Pound Potatoes (unpeeled)
– 1 Cup All-Purpose Flour (more as needed for kneading and shaping)
– ½ Teaspoon Salt
– 1 Medium Egg (room temperature)

Process
– Peel potatoes, chop into large cubes, and boil on medium high until very soft.
– Mash with a fork or ricer, let them cool down.
– Make a mountain of your potatoes and then put a crater in the middle.
– Drop the egg in the crater and slowly start mixing everything together.
– Add the flour and begin to knead as dough forms.
– Knead for 8-10min or until you have a smooth dough that bounces back slightly when pushed.
– Roll dough into ropes, cut into ¾ inch pieces, and shape with a fork or Gnocchi board.
– Boil in salted water until they float. Drain and serve with your favorite sauce.

For the sauce:
Ingredients
– 1 Tablespoon Olive Oil
– 2 Cups Cherry Tomatoes (cut in half)
– ½ an Onion (diced)
– 3 Cloves Garlic (minced)
– 1 Large Sprig of Basil (rough chopped)
– ½ Glass Dry White Wine
– ½ teaspoon Salt
– 2 Hamburger Patties (or ½ pound ground beef, you choose chef)
– Pinch of Black Pepper
– Chopped Parsley for Garnish

Process
– Heat oil in a medium sauce pan over medium high heat
– Sauté onions with a pinch of salt until lightly golden brown
– Add garlic, tomatoes, basil, cook for 3-5min
– Add wine, stir for a minute to evenly incorporate.
– Add basil on top then turn down to a simmer and let cook for 10-15min
– Move sauce to a blender and blend until mostly pureed
– In the same pan, throw in your hamburger patties. Break them up while they cook with a wooden spoon until browned.
– Add sauce back in, stir, and turn down to low for 5 min.
– Add salt and pepper to taste and enjoy over noodles or these hand made Gnocchi.
