    Yes, the shredder hopper attachment is terrible for soft cheeses. The cheese rolls around in the space between the plate and hopper and spits out these annoying balls. Now I just order pre shredded cheese for a couple bucks more. It’s not so bad for grating Romano or parm, but that’s it.

    I used to use a big hobart like that to shred tons of cheese and get those weird globs in your picture. The trick is to just grab the globs out between blocks of cheese and throw it back in the hopper before shoving in your next block and it gets shredded into the pile like the rest. You’ll inevitably end up with a little bit of a glob at the end, but you can end up with far less than you did if you pull it out then ram it through with another block. We used to call that glob at the end “cheese snack” cause it’s pretty spreadable, and is nice for a snack after you’ve shredded all that cheese.

    Yup. I also belive that shredder assembly is held together by bread ties and hope… Speaking from experience.. 😆

    yeah actually, because I have a small child and her favourite thing is asking for shredded cheese and then compacting it together in her sweaty little hands before exclaiming “CHEESEBALL” and stuffing it into her face the same way the cookie monster does with cookies.

    You can freeze it if you care and re-introduce it with your next shredding. It will shatter rather than goop up.

    That looks like a bag of shredded got left on top of something hot and it melts into one

    Yes, it always gets that was with an industrial shredder. I like to take the ball at the end, and egg wash with some flour for a nice crispy cheese ball snack.

    This is what happens when you let cheese curds roam freely. They have to be farm-raised so they stay a normal size

    Get yourself a cheese hogzerlla or something like that can’t remember the name my old boss bought one from Vegas pizza convention one year it was like cheese grinder that loaded full blocks and you just pushed straight down through the shredded plate thru a short space right into your bins

    I know what that is I’m talking about a thing that took the whole Hobart motor rotated the grater to be horizontal instead of vertical

    I’ve lived this life. Put the cheese in the freezer for like 30-60 minutes, not enough to freeze it, but enough time for it to stay cold against the friction of the wheel. Helped a lot in our hot ass kitchen.
