Zucchini and carrot noodles (made with veggie peeler), tomatoes, cucumber, chickpeas, avocado, parsley, dill, spring onions, marinated tofu with green cashew sauce. For sauce I used blender, a bit less then cup of cashews, juice from half lemon, garlic clove, a handful of dill, a handful of parsley, peace of ginger, a handful of spring onions, a bit of soy sauce and cup of water.
