Chicken Salad with Sweet Chili Lime Dressing

Sweet Chili Lemon/Lime Dressing:
Ingredients:
• 3 tablespoons sweet chili sauce
• 2 tablespoons soy sauce
• Juice of 1 lime (or lemon, if lime is not available)
• 1 tablespoon rice vinegar
• 1 tablespoon maple syrup
• 1 teaspoon sesame oil
• 2 tablespoons garlic-infused olive oil
• Salt and pepper to taste (optional)

Instructions:
• In a bowl, whisk together sweet chili sauce, soy sauce, lime juice (or lemon juice), rice vinegar, maple syrup, sesame oil, and garlic-infused olive oil.
• Whisk until all ingredients are well combined.
• Taste and add salt and pepper if needed.

Note! The leftover sauce can be stored in the fridge for up to one week!

Salad:
Ingredients:
• Lettuce
• Baby spinach
• Baby kale
• Boneless, skinless chicken thighs, thinly sliced
• Seasonings (salt, black pepper, onion powder, garlic powder, paprika, honey chili glaze)
• Sweet chili sauce
• Bell peppers, thinly sliced
• Carrots, julienned
• Cucumber, cut into strips
• Red onion, sliced
• Sesame seeds

Instructions:
• In a skillet, heat a small amount of oil over medium heat.
• Season the sliced chicken thighs with salt, black pepper, onion powder, garlic powder, paprika, and honey chili glaze seasoning. Add a little bit of sweet chili sauce.
• Cook the chicken slices in the skillet until they are cooked through and slightly browned. Remove the chicken from the skillet and set aside.
• In the same skillet, add a little more oil if needed.
• Add the sliced bell pepper and julienned carrot. Cook for 2-3 minutes, just until they start to soften but are still slightly crisp.
• Remove from heat and set aside.
• On a serving plate, place the lettuce leaves, baby spinach, and baby kale.
• Drizzle the dressing over the salad.
• Add the sliced onions, cucumbers, cooked chicken and carrot pepper mix.
• Sprinkle some sesame seeds over the salad.

You can prepare the chicken and carrot, pepper mix in advance and store them in the refrigerator for up to 5 days.
