Instructions
1. Preheat oven to 350 2. Boil chicken and shred or cube, set aside 3. Combine all casserole ingredients (except chicken) in a large bowl, mix until smooth, fold in chicken 4. Put into a greased casserole dish ( olive oil or avocado spray, top with reserved cheddar, bacon and slice jalapeño ( optional) 5. Bake at 350 for 30-35 min or until cheese is bubbly 6. Serve with a side salad or use as a dip
