I mean he has helped people understand the amount of labor and love that goes into quality food, I’ve used some of his recipes as guidelines for my dishes and he helped expose my girlfriend into being more adventurous when eating out so overall I would say he and the other food tubers have helped people improve the quality of their own cooking professionally or just at home. I will say the new content isn’t always for me but I enjoy it.

A few Christmases ago I go on a rant with the other sibling who cooks about how much I dislike Weisman/how he represents everything that I dislike about chef culture. Fast forward a few hours to unwrapping his cookbook that my parents bought for me. I felt like such an ass hat..

I think he’s gotten better about it. Early that was very true but now a days he fact checks his costs and offers shortcuts or substitutes and mostly I take away science from his recipes which I can utilize for other recipes. A big example is I tried incorporating his tangzhong into my copycat roll hawiaan roll recipes and it’s been a big help. But I’m trying to perfect recipes by understanding what does what in a dish and defining the flavor and structure I’m going for.
