Hi! I am sort of confused of when a red pepper is ready to eat. I just slice and sautee them in olive oil (I am obsessed).

I got this at the farmers market but it’s a little hard and green on the top – they told me I could eat it today but I am wondering if I should wait a few days?

Any tips on red pepper optimalness would be so appreciated!!

Also! Are “stretch marks” on the peppers fine?

    Yes it’s good, red bell peppers are green bell peppers that we’re allowed to ripen. The stretch marks are due to changes in temperature, water, or ripening

    I wouldn’t eat it. Instead, send it to me for uhm safe keeping, and I’ll dispose of it properly. I’m uhm only doing this for my uhm civic duty just in case it’s not edible. 😉

    In addition to what others have already said, peppers don’t ripen more after they are picked, unlike a tomato. So go ahead and eat it 🙂

    I used to work at a bell pepper facility. It’s more than okay to eat! Red bells are just ex-green bells.

    Looks fine to me. I would just eat it in salad, make pasta sauce or fajita veggies. I have eaten peppers looking wonky many time before and they taste really good.

    Its fine. you can even get chili pepper varieties with those little stretch marks as standard.
