Not a super big portion (fork for scale) but part of my diet has been getting used to eating smaller portions again. Don’t see a lot of vegan rep on here and I eat vegan + eggs so I’ll try posting some more vegan meals. It’s nice to have something easy to pop in the microwave sometimes

    Check the frozen section at Trader Joe’s. They really have delicious vegan meals with interesting macros.

    Looks good! I know people on here mean well but don’t hesitate to do what works for you and take their feedback with a grain of salt. I’m sure you’re not having this for every meal, things like this are what helps us stick to our target when we’re rushed for time, etc

    honestly, good on you for prioritising yourself and your health, just ignore the others on here. this is your journey and it’s up to you to navigate it on your own terms. you know what’s right for you; hey, anything is better than nothing!

    I know you said you’re trying to get used to smaller portions butttt I have a little bit of unsolicited advice you can do with as you will. Before microwaving, throw in a bunch of cauliflower rice (I do this by literally pulsing raw cauliflower in a food processor .. much less soggy and cheaper than any pre-packaged option) and cover with a plate/bowl. you can easily get 2-3x the volume for less than 50 calories. another thing I would do is eat this with ‘lettuce cups’ – essentially using lettuce leaves as you would tacos. Alongside a sugar-free carbonated drink and you’re golden, maybe even struggling to finish lmao.

    anyways, keep up the good work. I know how exhausting it is to be a mother so I hope these are quick and easy enough to implement into your meals. The longer you continue your journey the more you’ll learn and figure out what you like and don’t like; funnily enough there comes a time where you find it fun to scour the internet for dieting tips and tricks and new recipes to add to your inventory.     This also looks like it would be good – if you had the time/energy/desire – as sort of a “topper” for extra veg. 100ish extra cal of steamed or sautéed broccoli, cabbage, whatever you like would provide bulk *if* you wanted a larger portion, or if you’d had a more “mehhh” day of eating otherwise. But the idea that every single meal in a day has to be perfectly balanced in and of itself is just silly. 

    Also, the people freaking out about the ingredients?? There may be a lot of them, but they’re all literally just totally normal foods lmao. Oh nooo, the horror of *squints* cooked rice, vinegar, soybeans, and pineapple! I’m rolling my eyes so hard.

    76g of carbs 33g of sugar and 12g of protein? That’s horrific ngl. Imo you can get frozen pizzas, i remember back in the day i used to get 2 frozen chicken pizzas and each was like 600-650 calories 17g of fat 32g of protein and 99g of carb, it was a life saver for me to be able to sustain 1200 calories for diet for a long time.

    We are Orthodox which means most of the year on Wed and Friday we essentially eat vegan and I’m having a hard time with my Wednesday lunches now that I’m back in the office. If this is good I’ll get one!

    I also found red curry at Costco. It comes with the curry packets AND the prepped rice in a bowl and I believe you just microwave it all. I think it was less than 300 calories but I can’t remember. I haven’t tasted it yet but when I do I’ll post it here!
