730p night before headed pit boss with bear mountain competition pellets, apple wood in the smoke tube + water pan at 250.

Set it and forget it, (used welding blanket as it's getting cool in the northeast).

By 8-830am I hit 203.

Wrapped into cooler for 2 hours, shredded, back to cooler.

Reheated at 250 on the smoker with a little brown sugar and Stubb's BBQ. Warmed some beans in my cast iron next to it.

Accompanied with bread&butter pickles, Cole slaw, smashed baby potatoes.
