Delicious Cherry Tomato Confit on Basil Cream Toast with special commentary courtesy of my gf 😂.
Recipe:
Confit Tomatoes:
2 cups Cherry or grape tomatoes
5 Garlic cloves, smashed
5 sprigs Fresh thyme
5 sprigs Fresh rosemary
Extra virgin olive oil (enough to cover the tomatoes)
Salt
Set your oven to 300°F.
Place the grape tomatoes, garlic, and fresh thyme in an oven-safe baking dish. Ensure the tomatoes are in a single layer for even cooking.
Pour in enough olive oil to cover the tomatoes completely. This helps them cook slowly and infuses the oil with flavor.
Season with salt and pepper
Place the dish in the oven and cook for 1 – 1.5 hours, until the tomatoes are soft, tender, and slightly shrivelled but not falling apart. They should be infused with the garlic and herb flavours.
Basil Cream Cheese:
1 cup (loosely packed) Fresh basil leaves
2 heaping teaspoons Cream cheese
½ Lemon zest/juice
S&P
Combine all ingredients in a food processor.
Blend until smooth.
Toasted Baguette Slices
Garnishes: Fresh basil, balsamic reduction, lemon zest, herb oil
