I just got back from holiday and turkey and the resort served this dish and I fell in Love. It’s a grilled flat bread with a tomato base, ground meat and tiny diced tomato and red onion. I’m gluten intolerant and allergic to wheat so I was in chronic pain the next day and had to chill in the spa to recover. I missed a full day on the beach with my bestie but trust me it was worth it 😅

So this is my attempt at modifying it to suit my diet. This is a “Lazy girl” recipe for me as I’m working on a recipe list called “Dining in the dumps: low cal bingeing for when you just can’t even”. I tried to do the bare minimum for each part of the dish. Here are my tips and tricks.

Cottage cheese base:

  • Don’t measure anything, just crack the eggs into the pot (ALDIs pot is 300g so I used two eggs) and blend in the pot with a hand held blender or electric whisk until the curds are broken up. Pour into a silicone baking tray and sprinkle seasoning on top. You can add the seasoning to the pot and blend it in but I forgot and I’m lazy

  • Cook on a LOW heat (I use gas mark 1) and make sure you undercook it so it’s still a bit moist and gooey on top but browned on the bottom. Once cooked, cover the tray to trap the steam which will help soften the flat bread and cook it some more without drying it out so it will be firmer by the time you’re ready to add the toppings

Tomato base:

  • Literally just mixed 50g of passata with a tablespoon of siracha. I let the hot sauce and its ingredients do all the seasoning for me. Yes it’s lazy and bastardises the cultural origin of the dish but so does the rest of this recipe. Pour the sauce in the base and spread with a butter knife

Ground meat:

  • I used a Maggi cube, a tiny dab of scotch bonnet pepper paste and garlic powder for simplicity and ease. Sprinkle on top then smear into the bread base and sauce to really embed it

Diced tomato nets and onions:

  • I got an electric chopper 😎 no more chopping for me!

All in all the prep time took about 10 mins then the totally cool time was 15 mins for baking the base then another 10 mins under the grill or in the air fryer to crisp it up once the toppings where on. But obviously while it was cooking I was able to sit my lazy ass down and chill out. So only really spent 10 mins total on my feet cooking this one. Very happy with the taste and minimal labour 😁
