✨Veggie Mediterranean Sandwich✨

This Veggie Mediterranean Sandwich is a fresh, light lunch full of colour. Made with chickpea hummus and whole grains, it has protein too.

Here’s what you need:

2 tablespoon hummus spread
2 slices of bread of choice
4 green leaf lettuce leaves
Avocado
Bell pepper (optional)
thin slices of tomato
Thinly sliced onions
6 thinly sliced cucumber slices (I didn’t have so couldn’t add)
2 tablespoon cheese (optional)
¼ cup jarred roasted red peppers (optional)
2 teaspoon extra virgin olive oil drizzle

To assemble your sandwich Lightly toast both slices of bread, on one slice- spread an even layer of hummus. Top with lettuce, tomato and cucumber. On the second slice, gently spread a layer of mashed avocado. Top with roasted red peppers, sprouts and drizzle with olive oil. Close your sandwich, slice and enjoy. 😊
