Serves 5

Ingredients –

5 – Low Calorie, High Protein Wraps
1 Tbsp (14g) – Unsalted Butter
12 – Whole Eggs
1/4 Cup (60ml) – Low Fat or Whole Milk (Optional)
10 – Bacon Rashers
2 – Avocados, Mashed
200g (7.05oz) – Cheese of Choice, Freshly Grated
Seasoning To Taste

Method –

Preheat oven to 180.c -350.f. Line a baking tray with parchment paper.

Lay the bacon on the prepared baking tray and bake in the oven for 13-14 minutes or until cooked to your liking.

Crack the eggs into a bowl, add milk (optional), and whisk to combine. Place a pan over medium heat. Add the butter and egg mix and cook for 2-3 minutes, mixing regularly. Cook until soft and fluffy but still wet. Remove and set aside.

Mash the avocados in a bowl and season to taste.

Lay 5 wraps on your bench and evenly divide all the ingredients across the wraps. Top with cheese and wrap tightly, covering both ends.

Wrap tightly in foil or food paper or place in meal prep containers. Store in the fridge for up to 5 days or in the freezer for up to 4 months. Thaw overnight in the refrigerator if frozen before reheating.

The wraps can be eaten fresh or toasted in a hot, dry pan until crispy and golden. Dig in.

  1. This recipe really takes me back to when we all loved BLT’s they were ridiculously popular I loved them we still cook them today only no egg or avo and good old mayo. Nice recipe thanks Chef Jack.😂😊

  2. Hey Chef Jack, ive been sick from past 5 days..and just picked up the phone and saw this video… and you cracked me up on that egg breaking skills. As for the recipe…its so so so comforting.. avocado, scrambled eggs are delicious and creamy and then there's bacon…bacon makes everything better 😋😋😋 will dig into this dish after a few days for sure

  3. Hmmm, delicious. I would leave out the siracha but serve one of these all toasty and warm from the pan with salsa instead. Thank you for this!

  4. Kielbasa, kapusta (aka sour kraute) one pierogi (potato+cheese-sliced up)egg over east w/cheese. rolled into wrap. fried for a couple minutes each side in same pan as eggs. I call is "the slav-squat "!!!😎

  5. Won't that salt bring out water from the eggs over the few days in the fridge?

Otherwise, great simple recipe. Gotta try that.

  6. Hey Jack what’s the model of your gas stove? Been following for a while, amazing content

  7. Simple and delicious. I like to add chopped raw onion, and I sometimes shake it up by using coarsely chopped hardboiled eggs instead of scrambled.

  8. Hi Jack great video as always, I wanted to ask do you have plans to make some great aussie comfort foods like meat pies & sausage rolls??

  9. What did you do with the cheese? You didn't show it. You said i must melt. But you did not meld it at the end did you?

  10. Dude you’ve become my favorite chef to watch in a matter of a few months. Your content and recipes are unbeatable. Thanks for all you do! Btw could you have melted the cheese in with the eggs instead of topping them off? Curious if you tried that method at all.

  11. Looks delicious, however one question – won’t avocado mash turn all dark after some time in fridge? This happens to me whenever I store sliced remains of avocado in fridge.

  12. Don't forget to ask for a coin if you gift a blade!
In some cultures giving a blade for a gift is a really bad omen for the relationship 'sever the relationship' gifting the coin changes the gift to a transaction i think.
    Chop carrots not friends! 💀
