Hey everyone, I am cooking different recipes with mushrooms porcini.
First, I cook Sautéed Porcini that I will use in Risotto (Rice) Porcini, Pizza with Porcini, Gnocchi (Potato Dumplings) with Porcini, Ravioli with Porcini and Tagliatelle (Noodles) with Porcini.
Sautéed Porcini
Ingredients
Porcini mushrooms, cleaned and sliced 1 kg · Garlic cloves · Sunflower oil 60 g · Salt to taste · Pepper to taste
Risotto with Porcini
Ingredients
300 g Carnaroli rice
50 g Sunflower oil
cloves of garlic
salt and pepper
1 l hot water
200 g sautéed porcini
1 sprig of parsley
70 g Grana cheese grated
Pizza with Porcini
Ingredients
Pizza Dough (400g flour, yeast dried 7g, warm water 230g, sunflower oil 10g, sugar 15g, salt 10g)
for the filling (Peeled tomatoes 200 g, Fiordilatte 200 g, sautéed porcini 200 g, Parmigiano Reggiano grate to taste, Extra virgin olive oil to taste, Salt 2 g, dried oregano)
Pasta Dough for Ravioli and Tagliatelle
Ingredients: (100g flour, 100g re-milled flour, 2 eggs)
for filling of Ravioli (200g sautéed porcini, bit of Grana cheese)
for season of Ravioli (Peeled tomatoes 200 g, Parmigiano Reggiano grated to taste, Parsley,
Extra virgin olive oil to taste, Salt and Pepper to taste)
for season of Tagliatelle (200g sautéed porcini, olive oil, parsley, Grana cheese)
Gnocchi with Porcini
Ingredients
Gnoochi Dumplings (300g boiled potatoes, 100g flour)
for season of Gnocchi (200g sautéed porcini, olive oil, parsley, Grana cheese)
