1. Marinate/velvet the chicken: Mix soy sauce, cornstarch, honey, and 1 tsp sesame oil in a bowl. Coat the chicken and let it marinate for 15-30 minutes 2. Cook the rice: Rinse the rice and cook according to the package instructions 3. Heat oil: Heat 1 tbsp vegetable oil in a pan over medium heat. 4. Sauté garlic and ginger: Add minced garlic and ginger to the pan and sauté for about 20 seconds. 5. Cook chicken: Add the velveted chicken and stir-fry for 2-3 minutes until browned 6. Cook veggies\: Add sliced onion and capsicum, cooking for another 3-4 minutes until they are tender and chicken is cooked through. (Sometimes I like to just add a bit of water and put cover/lid on the pan and just let the steam cook through) 7. Finish with soy sauce: Pour in 1 tbsp of soy sauce, stir everything together, and serve over rice. If you want to make the sauce thicker, add a bit more Cornstarch
