Which temp should I trust? I have a pitboss pro series.

Where are p1 and p2? Every grill has hot and cold spots pellet or otherwise. The top of my Woodwind Pro is 15-20 degrees hotter than the bottom, and the temp reads about in the middle. Yours are a lot further apart but could still be placement

My Pitboss chamber temp probe was notorious for buildup and erroneous readings. Cleaned that thing EVERY smoke.

Second, temperatures will be different across the cooker, it won’t be uniform through the whole thing.
Third, maybe it’s just me, but I feel like being off 20-25 degrees isn’t a huge issue. I don’t care how much anyone pays for their smoker it will never actually be the same temperature when measured on multiple probes. They’re all different. As long as you’re not 100+ degrees off I think you’re Gucci.
