We sell this dish at our cafe as part of our brunch menu, I don’t feel too confident with the current plating, what do you fine people think? Would appreciate any feedback!

What is oven baked Hokkaido?
As far as I know and everything that comes up on google, Hokkaido is the northern most island of Japan…. not sure how you’d bake that?
Just make it a sandwich
Usually, I am a fan of height, but in this case, I would do two thinner slices of bread and just not pile as high. Should relax things a fair bit

Have you sat down at a table to eat that? I don’t like getting food which I feel is going to be “embarassing” to eat. Get sauce all over my mouth because it’s too big, or have things falling off it because of the same.
This feels like it either needs to be a sandwich (no) or a salad – probably since that’ll allow you to showcase the colors and textures. Can you crouton the bread?
Looks like a table centerpiece. And I’d get rid of the pesto, that seems like a clashing flavor to pink hummus. Other than that, the colors are amazing. The heights a bit much, but meh.
The sprinkle of pumpkin seeds and spices on the plate are not a good addition, Set the plated item up on a tray and then move the finished item to the plate. Maybe serve the radiccho on the side. Shredded radiccho, dressed with a vinaigrette with made with the pesto. Less on top of the bread may help but it’s still just an open face sandwich.
Hokkaido bread probably refers to Hokkaido milk pan which is soft and white bread. This would make people angry here in Japan, especially for that price

I don’t have any complete solutions but those definitely shouldn’t be laying alone on any plate.
Simple, Less is more. Strong flavors and different textures will help you make it less messy. just don’t use what you don’t strictly need.
Serve this in a wide bowl with the toast cut into smaller wedges on the side of the bowl, others have said but it can’t be eaten like this it should be dipped into using the bread
To me as someone whose working in ‘brunch’ for years now, it looks far too ‘put together’ and organised.
Those ingredients to me read as something you slather on the toast and dump everything else on-top of for the natural look.
You would do yourself a huge favor by putting this on a lighter color plate or at the very least piece of square paper under it; and make it clean, none of the stuff on the plate.
Plate it as a salad instead, with bread on the side.
That’s way too freaking busy as an item. No one should have to unhinge their jaw to eat a dish cleanly.

What’s hokkaido? because “hokkaido bread” is its own thing irl, and hokkaido is the region in japan, but what’s “oven baked hokkaido”? Further research shows that “hokkaido” is also a breed of dog and breed of pony. so what’s going on here OP?
As for the plating, i feel like 90% of the problems here would be solved if you plated it the exact same but with the bread on a side plate. its too tall and cutting through toasted sourdough covered in stuff makes a mess
