Spinach, avocado, tomatoes, topped with 4oz of 93/7 ground beef and half cup of yellow rice. The yellow rice is a weakness of mine my goodness. My daughter loves it too so I made extra and it took so much willpower not to just eat a few huge spoonfuls of it when it finished cooking… the dressing is low cal sour cream mixed with some taco bell hot sauce. I would usually add some cheese and a few crushed up tortilla chips but I saved room for a couple vodka sodas instead, because Friday! Happy weekends all!
