I've always noticed them inside my hoods, but never gave them any thought until today. What are they?

    It will connect into a control board that takes some sort of action like turning something on, controlling a PID controller to achieve a set temperature, detecting a pilot light, or activating a fire suppression system.

    The context of where it is and what temperature it’s measuring will determine why it’s there and what it controls.
