Everything but the canned salmon and grapeseed oil came from the garden! I am a volume eater but couldn’t even finish this whole thing in one go 😅
Not really a recipe, but here is what I did:
Sauté onion (plus garlic or ginger or whatever you want) in the oil or fat of your choice. Add chopped chard, then empty
The can of fish with its liquid and put a lid on the pan to steam/heat through the greens. Add cubed (already cooked) squash. Make a small well in the center. If necessary add a very small amount of fat/oil in the well. Crack your egg into it, then put the lid back on the pan to steam egg to your liking. Salt/pepper and parsley to taste.
Would be really good with some chili crisp, but I am saving my calories for dessert.
This would also be a good breakfast taco filling with some fresh corn tortillas and a little salsa or hot sauce.
