Ingredients

Topping:
– 1/4 cup (1/2 stick) unsalted butter
– 1/2 cup packed brown sugar
– 8-10 slices of canned pineapple rings (reserve the juice)
– Maraschino cherries (optional)

Cake Batter:
– 1 1/2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 cup (1 stick) unsalted butter, softened
– 3/4 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1/2 cup sour cream or plain yogurt
– 1/4 cup pineapple juice (from the canned pineapples)

Instructions

1. Prepare the Topping:
– Preheat your oven to 350°F (175°C).
– In a 9-inch round cake pan, melt the butter over medium heat or in the oven.
– Once melted, evenly sprinkle the brown sugar over the melted butter in the pan.
– Arrange the pineapple rings over the brown sugar mixture, and place a maraschino cherry in the center of each ring if using. Set aside.

2. Prepare the Cake Batter:
– In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
– In a large bowl, using an electric mixer, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
– Beat in the eggs one at a time, followed by the vanilla extract, until well combined.
– Gradually add the flour mixture to the butter mixture, alternating with the sour cream (or yogurt) and pineapple juice. Start and end with the flour mixture. Mix until just combined; do not overmix.

3. Assemble the Cake:
– Pour the batter over the arranged pineapples in the cake pan, spreading it evenly.

4. Bake the Cake:
– Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.
– Remove the cake from the oven and let it cool in the pan for about 5 minutes.

5. Invert the Cake:
– Run a knife around the edges of the cake to loosen it from the pan.
– Place a serving plate over the cake pan and carefully invert the cake onto the plate. Let it sit for a few minutes to allow the topping to settle before removing the pan.
– Allow the cake to cool completely before serving.
