Nothing like fresh Peri Peri sauce! 🤤
It’s HOT and sweet and everything nice, just the perfect flavour explosion. You can use this sauce for anything honestly!
But works really well in this salad form too.
Recipe (serves 1 – 351 KCal with 23 G of protein per serving)
Ingredients
80 g paneer cubes/slices
75 g sliced mushroom
50 g slices baby corn (or any veg of choice)
1 cup shredded lettuce (iceberg/green)
Salt to taste
Few sprays olive oil
1 tsp sesame seeds/furikake seasoning
For the sauce –
3-4 Thai Birds Eye chilli or 4-5 dry red chilli (add according to your slice tolerance!)
2-3 shallots or 1/4 onion
2-3 cloves of garlic
1/2 tsp chilli powder
Few sprigs of fresh basil leaves – else can even add parsley/coriander
1 tsp white vinegar
1-2 tsp coconut/brown sugar or honey
Salt to taste
1 tsp olive oil
Optionally, you can also add one roasted red bell pepper
For the dressing –
2 tbsp Greek yoghurt
Method
1. Blend together all ingredients for the sauce.
2. Set 1 tbsp aside and blend the remaining with the Greek yoghurt.
3. Grill the paneer with some salt.
4. Sauté mushroom and baby corn with reserved sauce.
5. Layer up on a bed of lettuce with the veg and paneer, top with a few spoons of the dressing, a sprinkling of sesame seeds and dig in! ❤️
