Hi everyone,

After a long search I was able to finally score some Dino Ribs in WA.

I gave up on finding them in Greater Vancouver.

Anyways, I've looked through here and it seems everyone has different temps/time for Dino Ribs on particular.

I've got a LG 700 and Bear Mountain hickory, apple and maple on hand

Hoping for the penultimate dino rib recipe!!

I was doing S&P plus Lawrys but have since switched to Meat Church Holy Cow + pepper and a bit of salt.

    I don’t trim the fat on them, last time I did them at 250 and let them ride no wrap and pulled when the probe slide in under it own weight took about 8 hours

    I use just SPG , trim off fat from top , mustard binder or hot sauce and cook at 275 until probe tender then rest for 4 hours in cooler. They are super easy.

    Luckily in Seattle area I can get them at local grocery store and or butcher. Never seen them at Costco.

    I’ve only cooked them once but they didn’t get tender. So give them the time they need. And rest/hold them!

    Which Costco did you find them at?

    Bellingham? Mt Vernon?

    Further south?

    Clean them up a little bit then let them ride for as long as you need until they’re probe tender. Max bark, spritz a few times if you think they look dry. They’re honestly really hard to screw up.
