Is 1 onion considered enough for a (pasta) sauce??

Depends. My last pasta sauce was made of 10 large red and yellow onions, a pound of mushrooms and a half litre of cream and beef stock, respectively. Also shredded chicken.
For a Bolognese for example I’d use about 5.

Depends how much sauce you’re making, if I’m using a 28 Oz can of whole tomatoes or about 10 fresh plum tomatoes, one large onion is plenty; the size of the onion and variety of tomato also matters.

I personally use about 2 or 3 for a small batch of sauce. But you should also evenly mince your onion so it cooks better and the flavor is distributed throughout. The more onion cell walls you break, the more onion flavor there is. If you cant get it thin enough by hand, you can use a food processor

How much does the recipe call for? Use 50% more minimum. 2x as much is good. Anything above that is a bonus.

I almost hate to say how much deliberation the frugal side of me debated your question,(all while debating onion powder as a substitute) but remembered onions are cheap as fuck, so as many as needed seems acceptable.
