So preface here, I’ve been working here 6 months it’s a university cafeteria, 86% of student are athletes so it’s high demand, I worked solo in the Italian station all that time, I’m a professional at dough and pastas, the students love me, my coworkers love me, but he executive chef doesn’t have the most skill at pizza and is bullheaded as they come, well yesterday he decided he’d “help” by making dough himself, he used 4x the amount of dry yeast and we argued about this, I got to make a new batch at the end of the night and he comes over and puts 4x the yeast in it again, we get in to a argument he yelled in my face and i realized I wasn’t gunna sit around and feed students something I wasn’t proud of, so I quit, am I in the wrong? Btw the video is his dough after 1 hour in a fridge

    I’m now in the pizza kitchen at 15+ years… and wtf?! How is he top dog and putting that much yeast? It blows that you had to deal with this and it sounds like this executive would only lead to more stress and problems down the line. Hope you have some great luck in your next adventure.

    But good on you, I would have left, too. I worked at a Uni kitchen and stocked for a bit, I left because of how fucking dumb the management was. They were contracted out by the Uni and they eventually got their contract canned because they were so terrible.

  5. Brother, I took shit for two years, not with pizza dough this bad as I took control of that early on, but similar in other circumstances (let’s do a special where we microwave meat pies and mashed potato so specual)

    Don’t take these morons personally. You’ll meet thousands of them. We control what we can, it’s the only mentality we can actively hold most the time. So many things are chaotic and stupid in kitchens, and idiots seem to breed near kitchens, either that or they just end up there because why not. No passion, low effort, low understanding, all of which don’t matter if you’ve got a willingness to learn. But fuck. Don’t waste your time on a place with no common sense workers.

    You’ll be fine if you just continue holding high standards for yourself and have a willingness to learn. Everyone and everything else can just go fuck itself, stay sane, create brilliance.
