    Huge roasting pot, add 10lbs, olive oil, salt pepper, marjoram, stack several seared pork shoulders coated in sharp mustard on top, more marjoram, then the remaining 10lbs over top, add 4 cans of beer, lid on, put in oven at 150°C for 4 hours.

    Sauté adding salt. Get them caramelized. They’ll get smaller to store and sweeter to taste.

    Once nicely browned and sticking just a bit to the pan, indicating they are dried out, portion into freezer containers and freeze.

    The shape you slice the onions into sort of casts the use of the final product so with that many, do some diced, some sliced, and some in quarters or eighths.

    Take your time doing the sautéing.

    Remember to squish the air out when packaging for the freezer. And label with date and slice shape.

    Sautéed onions, nice and brown and slightly crispy and salty, can go with breakfast eggs and sausage or bacon.

    Side quest: if house guests are coming, while you sauté the onions, boil a whole lot of potatoes. They will go well as home fries, with some onions, to make the house guests get up on time (the enticing aromas).

    The onions can be added to soups, and they can be added to many other foods, where a sweet/salty seasoning adds to the flavor.

    Grill some to use for burgers, stick the rest of them in the freezer and probably forget about them. Maybe make some homemade onion rings, or maybe a meatloaf.

    I did that two weeks ago and made caramelized onions. I used some for soup and froze the rest for later use. Burgers, soups, pasta, pizza, and many more things can be improved with some caramelized onions
