• ingredients:
– 2lb ground beef
– 2 onions ( 1 diced, 1 thickly sliced)
– 1 pepper ( 1/2 thinly sliced, 1/2 thickly sliced)
– 2 tomatoes ( 1 thinly sliced, 1 thickly sliced)
– 3 minced garlic cloves, & 4-5 whole garlic cloves
– thin feta cheese slices or feta cheese crumbs
– about 3 water soaked slices of bread
– lemon juice
– salt and pepper
– oregano, thyme
– 2-3lb potatoes cut in thick chunks
– 2 zucchini in chunks ( optional)
– olive oil measure with your heart
– 2-3 cups water or broth of your choice
• instructions:
– clean and cut all the veggies, into a skillet or oven pan ( I used 14 inches cast iron) add the potatoes, the zucchini, the thickly sliced onion, pepper, tomatoes, garlic, thyme and the rest of the seasoning , olive oil, lemon juice and mix very well, then add water/broth and bake at 400F(200C) for about 50mins
– meanwhile into a bowl add the ground beef, the seasoning, the diced onion, the minced garlic, a dash of olive oil and knead for 5 mins
– shape the burger, stuff it with feta cheese, pepper and tomato, make sure you lock all the ingredients inside and transfer over the potatoes
– keep baking 30 more additional minutes ( keep in mind it might need more water, or if it holds too much water increase the temperature)
– enjoy with tzatziki or tirokafteri and greek winter cabbage salad
