So these are the cheeses I am working with:
- Ewe Calf to Be Kidding (mixed-milk blue cheese)
- Saint Auger
- Roquefort
- Prime Donna Aged Gouda (mild Gouda)
- The Farm at Doe Run Seven Sisters Gouda (“Gouda, Cheedar, and Swiss hybrid,” notes of butterscotch, caramel and hazelnut)
- Fromager D’Affinois
As far as meats go I have sliced pepperoni, sliced Genoa salami, and sliced prosciutto and for crackers I have half a box of Good & Gather Entertainment Collection crackers. For accompaniments I have fig spread, Brin’s Banana Jam with vanilla bean, lemon curd, some Kalamata olives and pitted green olives.
I’d like to include one blue cheese, one Gouda, and the fromager d’affinois and another cheese or two but I’m not sure what would pair well cheese-wise or even accompaniment-wise. Any input would be very helpful!

Mhhh.
Walnuts and grapes are allways a good Addition to cheese, as well as Wine 😜.
Some Red grapes and good wine will Go a Long way.
Pears also enhance and better the Taste of verry strong Cheeses.
Other than that, i Experimentes with quarted baked and degloved Chestnuts, works great with unobtrusive Cheeses. As for the Crackers, maybe some Butter with Gardenspices (Salantro,Dill, etc.)
Also some Marmelades Work well with cheese, but im unshure, of which, so im Not gonna give Out wrong Info 😅.
That would at least be my ideas, you do you, of course.

When you say pair, do you mean wines or other items on the board?
You seem to have a good selection of accompaniments.
With those cheeses that are a little on the salty/nutty side I’d go with a Tempranillo if you’re looking for wine.
If board accompaniments I’d go with some fresh fruits and maybe a little bit of honey.
Edit: maybe add a something with a little heat like Shishito peppers.
It’s autumn, gotta slice some fresh, crisp apples or juicy pears.
Crackers, red grapes, prosciutto, salami, a few cookies or candy.
EDIT: Also, dried apricots go great with cheese.
