Duck Ramen! I bought this whole young duck for like 25$, was fun to cut up, carefully carving the breasts with their skin intact, I cooked them and the thighs sous vide, 55 for 2 hours. I made the broth with the rest of the beast, mirepoix and lots of ginger, reduced it on low heat, smelled amazing
Shoyu tare, duck fat, noodles, broth, sliced breasts, green onions and a bit of shiso chiffonade. Staff went ballistic lol and it was my first time prepping duck, cool stuff lol thought y’all would enjoy
