Slow roasted lamb shoulder on a bed of potatoes, with roast Brussels sprouts & a few peas.
Got feck all meat off the shoulder, annoyingly, about enough for dinner for 3 out of 1.5kg uncooked. What we did have was fantastic, but still a bit ticked off.

Recipe –
Wash and thinly slice 7-8 medium potatoes.
Rinse potatoes in cold water.
Butter a deep casserole/roasting tray, like you would for a cake.
Later the potatoes, seasoning as you go. If you have fresh herbs add them here; thyme would work well. I just used dried parsley.
Season a shoulder of lamb and lay on top of the potatoes. I made this years ago with two legs of lamb, and had a mix of garlic, fresh herbs, and dried anchovies which was amazing, but more effort that I was willing to put in today.
Cover in foil, roast at 160 fan for 3 hours.
Turn the oven to 200, uncover, then roast for 20 minutes to brown the outside of the meat.
Take the meat off and rest.
Brush the potatoes with melted butter, return to the oven to brown potatoes that were under the meat. At this point cook whatever veg you want, I roasted sprouts with salt, pepper, and oil in the hot oven.
Carve, serve.
Ideally be better than me at remembering gravy is a thing and make some of that too.

Looks nice. How long did you roast it for? What temp?

This looks lush, I’m sorry the lamb was so little in the end – if it’s on the bone, the bone can take up a lot of the weight sometimes (plus cooking shrinkage).
Crazy tip for roasted sprouts – a generous sprinkle of nutritional yeast flakes gives a delicious additional nutty flavour. I can’t remember where I learned this, but it really makes them next level. They sorta work on smashed roasties too, but less effectively.
Nutritional yeast is often a good add to meals for vegetarians, you might find it in delis or health food places.

Looks delicious! We had exactly the same outcome when my dad did a lamb shoulder, just enough meat for the 2 of us. He hasn’t bought shoulder since!

I do love a bit of roast lamb and that looks delicious. Shame you forgot the gravy but I guess that’s what granules are for.
