    It looks cool. It adds drama. It looks awkward to eat. Do you pick it up? Does it break into shards that go everywhere when you break it with a fork?

    Hopefully it tastes good. I’ve never understood fancy plating stuff like this, just isn’t my vibe. I get that people are into it, I just don’t understand it.

    Can you do the garlic version of this? PLEASE. Like the big chocolate thing is a roasted head of garlic (halved). Not big elephant garlic. Large but girthy garlic with small cloves.

    The broth should be a tomato consumme and the things the stick is resting on cherry tomatoes.

    On second thought, this is a summer dish but keep it in mind. If you ever make this let me know. I will fly out to eat it.

    God I miss working banquets. I only ever did max 200 plates, but it was the sweet spot for me. Seeing all of the identical plates lined up, synchronized team adding their touches before quickly firing them out. Most satisfying work I ever did.

    I helped at some event spaces that did those gigantic 1000+ parties and it just wasn’t as fun, impressive as hell though.
