Thick cloth or glove
Champagne Mignonette Sauce:
2 tablespoons shallots
1/4 cup champagne vinegar
Freshly ground black pepper
Soy Ginger Sauce:
1 tablespoon fresh ginger
1/4 cup soy sauce
1 tablespoon rice vinegar
1 tablespoon mirin
1 teaspoon sesame oil
2 finely chopped scallions
Garlic Butter Sauce:
2 tablespoons butter
1 garlic clove
1 tablespoon lemon juice
Salt
Peruvian Aji Sauce:
2 tablespoons Aji Amarillo paste
1 garlic clove
2 tablespoons lime juice
1 tablespoon olive oil
1/4 cup mayonnaise or Greek yogurt

Truffle Honey Sauce:
2 tablespoons honey
1 teaspoon TRUFF white truffle oil
1 tablespoon lemon juice

Classic Martini:
2 1/2 ounces gin (or vodka)
